Twice Baked Sweet Potatoes

Yield: 8 servings Cooking time: 1 hour
Preheat oven to 350 degrees. Slice sweet potatoes in half, lengthwise. Line a cookie sheet with foil, then spray with cooking spray. Place sweet potatoes face down, then bake for a 45 min - 1 hour, depending on size. Check at 45 minutes by flipping over the largest half, and prick with a fork in its center. If it is soft, they are done. If it still has a hard center, cook for another 15 minutes and repeat testing process until they are done.
After they are cooked thoroughly, remove from oven and flip orange side up. Let cool for 5 minutes. After 5 minutes, take a soup spoon and remove the insides from each potato, leaving enough on the skin to keep it in tact. Scoop into a large mixing bowl. Add butter, salt, pepper, and cinnamon, and mix to combine.
Turn oven up to 400 degrees. Spoon mixture back into potato shells. If you would like to add the marshmallows, now is the time. Add them on top of the mixture, once you have filled the shells back up. Sprinkle the marshmallows with 1 teaspoon of brown sugar per potato half (10 teaspoons total, if you are doing all of them this way) If you are not adding marshmallows, sprinkle the tops with salt.
Put back into oven for 8-10 minutes, enough to brown the marshmallows. Remove from oven and serve. Enjoy!
